Dish of the Day...White Chicken Chili

Ingredients:
  • 2 tablespoons olive oil 
  • 1 tablespoons corn starch 
  • 1 medium onion, chopped 
  • 1 can chopped green chilis, drained 
  • 2 cans white beans, drained 
  • 2 teaspoon cumin 
  • 2 teaspoon chili powder 
  • 1 lb chicken tenders 
  • 2 cups chicken stock 
  • 1 teaspoon salt 
  • 1 teaspoon pepper
Directions:

Place all ingredients in a slow cooker and cook on low 4-5 hours. Remove chicken, shred and return to slow cooker.

* This makes for a great freezer meal. To pre-pare, place all ingredients, except chicken stock, in a freezer bag and freeze. When ready to use, thaw, add stock and cook in slow cooker as directed above.
