Dish of the Day...Pumpkin Cheesecake

Ingredients:
  • 24 oz cream cheese 
  • ⅓ cup brown sugar 
  • 5 teaspoons flour 
  • 4 eggs 
  • 1 egg yolk 
  • 8 oz pumpkin (½ can) 
  • ½ cup whipping cream 
  • 2 teaspoons vanilla extract 
  • 1 teaspoon ground cinnamon 
  • ½ teaspoon ground nutmeg 
  • ½ teaspoon ground ginger 
  • ½ teaspoon ground cloves 
  • Refrigerated cookie dough
Directions:

Press out cookie dough in pan and bake as directed. Combine cream cheese, brown sugar and flour. Beat until smooth. Add eggs and yolk one at a time, beating well. Stir in pumpkin, cream, vanilla, and spices. Pour over crust. Bake at 350° for 15 minutes. Lower to 225° and bake 75 minutes. Turn off oven, leaving cake in oven for another hour. Chill, uncovered over-
night. Garnish with cranberries, walnuts, or orange slices if desired.
