Dish of the Day...Turkey Enchillada Casserole

Ingredients: 
  • 8oz can “no salt” tomato sauce 
  • 1 packet enchilada sauce mix 
  • 10 whole wheat tortillas 
  • 16oz shredded sharp cheddar cheese 
  • 2lbs of ground turkey (browned)
Directions:
  1. Make sauce per directions.
  2. Brown turkey. 
  3. Place 2 tortillas on bottom of 9”x13” greased pan. 
  4. Layer 1⁄4 turkey, 2 table- spoons sauce and sprinkle cheese (repeat 4 times). 
  5. End with a layer of tortillas. Pour remaining sauce and sprinkle remaining cheese. 
  6. Bake 30 minutes at 350° until sauce is bubbling and all the cheese is melted.
